Jane's Backyard Chickens: Recipes

Farm Fresh Eggs

There is nothing like them. If you haven't had a chance to taste them check out your local farmers market and buy a dozen.

They take a little getting used to for sure. The yolks are a deep, rich yellow/orange. The whites are thick and stiff and don't run all over when you open them.

They have a richer flavor and my husband had said they were too "eggy" for him. I started adding milk to his scrambled eggs untill he got used to the flavor. Once you do store bought eggs are tasteless.

They are great for baking and making sauces.

They are not so good for hardboiled eggs. It seems if the eggs are too fresh you just can't get the shells off.

So, check out your farmers market and give'em a try. Sure, they will be more expensive but well worth it.
